Spring 2008 Schedule for Raw food classesClick here to download the schedule in PDF formatBeginning Series1a. Intro to Living Raw Foods: In this class students are introduced to a vegan, living and/or raw foods regimen(s), the nutritional and digestive benefits of such a diet, and a discussion its effective kitchen set up. We finish up class making and tasting a delicious Almond Chai and snack. (Cost $25 per person) 1b. Soaking & Sprouting: In this class we cover methods and time charts, nutritional values, and tools needed for soaking and sprouting seeds, nuts, and legumes. We also make a sprout snack at the end of class. Students are set up with a few supplies and recipes to take home and get their sprout garden started! (Cost $60 plus $10 materials)
Culinary Skills Series2a. Breakfast, Green Drinks, Smoothies, 2b. Salads & Dressing, 2c. Soup & Pates, and 2d. Desserts all give students an understanding of creating efficient raw vegan meals in their own homes. We cover menu planning, recipe charting, shopping for ingredients, food combining, and flavor balancing. Focus is always on alkaline health & time efficiency, while never losing sight of taste and optimal health tradeoffs. Classes include chef demonstration(s) as well as opportunity for students to prepare various items following proven recipes. Improvisation for personal taste and dietary restriction is encouraged as time provides. We form community and enlarge our conscious eating support group by ending with a shared meal and discussion. (Cost $90 plus $15 materials fee for each individual class)

3a. Dehydrating Foods, 3b. Intro to Chocolate, and 3c. Pizzas and Pastas, 3d. Cultures & Fermentation, 3e. Entrees for Entertaining; are all enrichment classes, which take Raw Food even further! For many living a raw and vegan lifestyle focus on alkaline healing salads and food blends most of the time. Complementary entrees, munchies, and sweets fill out the diet in a robust manner. This is not a diet deplete of variety nor flavor. So to keep away the temptations of previous ways of eating and food addictions we offer several classes in what we call Transition Foods. Even the most impulsive omnivore will find these recipes delicious and satisfying. Addictions have less chance of taking control when you can create enticing living foods that stay within vegan alkaline boundaries. These earth friendly foods empower one to take-control-of-your-own-health! Reward yourself for your remarkable transformation into a sustainable Conscious Eater. So for the benefit of your unconverted family and friends, share the bounty by taking care to practice new talents presenting foods in diverse variety.
